I am running in DOS, well windows with no gui anyway. I am using an ATI Rage Fury Pro card that I just plugged into the machine and it worked with it's S-Video out. I'm pretty sure any ATI card with S-Vid will work the same way.
I also have a scan converter I was using, but the picture sucked.
