I'm basing it on LuSiD's cab (Thanks a ton LuSiD!).
It'll use a real arcade monitor. I'll put in a PC, PSX, SNES (www.gamesx.com has lots of info on how to get rgb out of most every system.)

PC:
Power Ramp and interact 3D program pad (I wish I could still find the program pad!) and VGA2TV drivers for DOS.

PSX:
A couple of the cheapest gamepads I can find, a hacked Nyko AV adapter (has a pass through port)

Snes:
I'm using this for the gun games it has.


Control Panel:
2 player-player 1 has 8 buttons(to play Quake) player 2 has the usual 6
Wico ball type leaf (4 way) joys or Happ supers (most games I use, a 4 way joy would be better)

I'm thinking about reflecting the monitor off a mirror for various reasons (ie added look of depth, looks flat)
