I'm not sure what the gauge is but I used a mixture of old wire scavanged from the inside of an old cabinet and speaker type wire, it works fine.
I would say go with whatever you can find the cheapest, but the comment about using different colours is a good one, or label them as you go, it gets pretty messy.
Another thing I noticed is that some of the wire I scavanged was a silver colour instead of a copper colour, this stuff is much harder to solder for some reason. Stick to the copper stuff, especially if you're not good at soldering, the silver stuff is a real pain.
