Right-handed people can tap faster with their right hand. Try it now - tap the table as fast as you can with your right hand, then do it with your left.
Joystick movements in arcade games are traditionally not precision movements. For example, you're taking a stick and jamming it all the way in 1 direction at a time. So, the extra co-ordination that your right hand would provide really wouldn't be of much benefit to you.
There. :) But everyone above is absolutely correct - it's all preference. I know people who always use the left-handed mouse settings in Windows even though they're right-handed. Go figure. :)
