There is a site called PC2JAMMA, from Brian Lewis(?)--the author of the popular front-end ArcadeOS--that documents his arcade cabinet project. He originally was just trying to be able to have multiple JAMMA boards in one machine/unit and switch easily between the games. I'm not sure how successful he was with that, but he eventually turned to building an arcade cabinet to house a PC for use with emulators like MAME. I don't know the URL off the top of my head, but a search engine (or maybe someone else on this board) will tell you.
