Quick Questions (2) please help. Wiring question and Hot Rod Question

I am making a secondary control panel to go with my hot rod joystick. My questions are this:

What gauge wire should be used and should it be stranded or solid?

Does anyone know what the purple covering on the hot rod joystick is made from? it has a nice feel to it and I would like to put a simillar covering on my 2nd control panel.
