I used a 3/4" sheet for my panel, and then used a router to recess the joystick bases until the lip of each base was flush with the underside of the wood. This reduced the thickness where the joysticks were mounted to just about 1/2". The 3/4" thickness feels better for the overall panel, and recessing the bases gives you a good stick length.
