Rotary sticks are just normal 8-way joysticks, but on the bottom of the shaft - is a trackwheel simular to that of a mouse. It shouldnt be very hard at all to hook mouse optics to the thing.

And, if Mame makes each axis selectable... Two rotary controllers would be possible.

Finally... It may also be possible to use pots for turning. BUT, you would have to modify the shaft to make it so that it didnt turn too far arround.. and also, may have a hard time hooking the pot up to the shaft.

Best bet is the mouse guts.
