You might be able to emulate the games perfectly but you'll never emulate the actual feeling of pluggin in the game board, its all todo with the concept.. booting the game up from DOS isn't the same.
I also believe there is a difference to collecting arcade items and rom images, like Brian I have got more heavly into collecting actual arcade boards and such, and to be honest the trouble with MAME is that it supports too many games now, I want to actually plug a game board and know that I've only got that board to play instead of pressing escape after 5minutes just to play another different game.
Some people are also really strange, just wanting to play games for nothing, at least this arcade cabinet building community contributes to help each other which is good and hence I will always be an active member even if I don't play MAME so often anymore.
