I've used 18 gauge stranded wire from Radio Shack. I'm an electrical engineer. Selecting wires depends on things like the length, current, and voltage. You could probably get away with using much smaller wires. If you're hacking a Playstion joystick, look at the copper traces that are connected to the buttons. That's all of the copper that's carying the current from each button (it would be equivalent to a very small gauge wire).
