I don't see why telephone wire would be any different than any other wire.
It depends on whether or not you use quick connects on your controls, and if you decide to use something like solder-connect 25 pin connectors.
I use anything between 18 and 22 gauge stranded wires. Whatever's on sale at the electronic supply place or I can snag at work for free.
