Going by the descriptions on the respective web pages.

K64 uses a dual polling technique (fast polling until a key press is detected, then slow polling until it is gone...if I remember correctly)

i-Pac apparently has an extremely fast microcontroller to effective eliminate the polling issue all together.

Both strategies seem to have a lot going for them. I just have no idea if there is a practical difference between them.
