In fact, what you discribed is exactly what I am currently doing, until I but a tv in my cab. I boot out to dos and then type in my arcadeos directory and run it. My monitor goes blank and then a bouncing square comes on that says "Frequency out of range" and then gives the frequency. I then swap the cables and turn on the arcade monitor. Actually, I no longer swap the cables but instead have both monitors wired to a switchbox so I actually just switch it.
