PC to arcade monitor....resolutions ?

If I MAME-ified an old cab, and stuck a PC in there what resolutions would I be able to use on a standard medium res monitor ? (e.g. 320x240, 640x480 ???).
I'm assuming a straight R=>G=>B, sync connection between the PC and the cab.
