I have made such a control panel for my upright cab. It has switchable trackball/spinner/4-way Wico joystick.
The trackball and spinner stay in VERY well, mostly because of the action on them with little or no moment arm (leverage). The joystick is a different story. I ended up having to make the stick's modular panel a very tight fit for it to stay in place during gameplay.
