Wow, only $200 for the Computer. I guess that is where some of the cost difference comes in to play. I dropped a $1200 computer in mine so that I could play things like Mortal Kombat 3 and NBA Jam at a good speed.
Also, you are talking about $25 for the cabinet itself. I built mine from scratch, so it has all news joysticks/buttons/trackball, etc. Not to mention the wood matterial, and finishing. Anyhow, but total for the cabinet that I built was
just at $2100. But that includes a 27" display, great sound system (not that it matters for some of the old games), all of the goodies like a working coin door, 2 8-way and 1 4-way joysticks, trackball, etc...
I guess I would just start with what it has cost you to build it, and then, as long at it wasn't a crappy job, add a couple of hundred or your time, labor, and basic knowledge needed to build it.
As far as market, I don't see that many people buying finished cabinets, but that could be because this is a Build Your Own site...
