Sure - having used both, I think MacMAME is the easiest format to configure ROM-wise (I HAVEN'T tried out Arcade OS though, which is supposed to be pretty good).
However, the thing that makes me hesitate about using a mac is making controls for it - there is a ton of source material on the web for doing it with a pc, but very little about doing it with a mac.
