I used to have a control panel setup like the one you want, inside the panel all the wires were separate including the grounds. The wires connected to a 50 pin cable. I had two cables that would plug into the back of the control panel, one connected to a PowerRamp which needed each button to have it's own "ground". The second cable connected to a PlayStation pad, I just took all the ground wires from the cable and tied them together to make one ground. So the trick is all in the adapter cables. Hope this makes sense.

You might want to check out the I-Pac encoder and the Kernel JoyPort, both work great on Macs.
