Question about pots

When designing custom devices that use pots, is it essential to use the right kind of pot?

The info at http://www.monmouth.com/~lw4750/index.html says to use 100k pots. However HappControls parts all use 5k pots. Would it be bad to wire a 5k pot directly to the 15 pin game port?
