I think I can help w/ some of your questions.

*Sounds correct.
2.If so, does it follow that an 8-way joystick presses two microswitches at a time?
* An 8 way joystick does indeed hit 2 microswitches when accessing diagonals.
BOTTOM LINE QUESTION: What benefit does an 8-way joystick offer over a 4-way one in MAME?
*4-way is great for pac-man, galaxian, q-bert and the such, but for most games, a 4-way isn't going to cut it. w/ an 8-way, you will be able to move in all directions w/ ease.
