Keep trying different keyboards until you find one that allows 8 buttons without masking (masking = ignoring keys pressed). Diodes probably won't help with masking.
PowerRamp Mite gamepad is $6 plus shipping, and since you seem to be only wanting 2-player 2-button setup, it should do all you want and give you four funtion buttons (esc, tab, etc.) Then you won't have to worry about ghosting/masking, figuring out the matrix etc. About as easy to hack as a Playstation game pad, but not as easy as an encoder.
