As for hooking everything up, I think it is very possible, but probably very expensive. You will probably need to use a combination of interfaces. Perhaps two daisy chained encoders, or maybe one encoder, and one USB interface (UGCI). I suppose you could use just one KE24, but figuring out a matrix setup for that many switches, that causes no ghosting, is a little too brain bending for me.
