Step 1: Check the resolution that that game is trying to run at (via the arcadeos menu, or it is on the title screen before each game starts)

Step 2: Edit MAME.CFG, and find the setting that says (x)x(y)arc_v=, where (x) and (y) are the resolution settings (ie 224x228arc_v=5)

Step 3: Adjust the number, usually up.

Step 4: Try the game again. If the 'flipping' is better, adjust again up. If worse, adjust the number down. You'll get it eventually. I had to do this with almost every resolution setting.
