I never thought of sink cutouts, but that's an excellent idea.
What I've been working with is MDF -- medium density fiberboard. It's a fiber-based shelving material. Home Depot has pieces 3/4" x 15.5" x 36 for about $3. When working with MDF, it produces LOTS of dust that looks like brown paper. It gets all over, so blow ahead of the saw or drill to keep the path clear.
