Setting analog controls in MAME

I would like to know how to redefine game speific controls in MAME for different analog options. I already know how to use the TAB menu to change which key controls certain options, but I haven't been able to find out how to change the analog options.

Here is a specific example of what I am trying to do. I would like to use two steering wheels in Championship Sprint. I would like to have one set to the mouse X axis (this is the default) and the other to the Y axis. How do I redefine this? And how can I change other directional controls to joy/dial/trackball X/Y directions?
