Here is the link to a guide on wiring your arcade cabinet that has some bits of information on installing isolation transformers. There are very detailed guides to repairing and maintaining CRTs elsewhere that also may be of help...I'm really sorry I don't have that link right now.
I am not experienced with CRTs myself, but I am in the same boat. I have a very old monitor (ELECTROHOME 1980) with old isolation transformers that look more like rusted scrap metal than electrical components. I will need to replace the equipment soon for my own piece of mind. Good luck!
