You can use pretty much any material you like, I suppose it really depends on how it will be finished.

For a natural finish you could use pine or oak in 3/4, then stain and/or clear coat it.You could do this with ply as well, but it may need to be edged with something to make it look nicer.

If you plan to cover it with paint, melamine or Contact and edge with t-moulding then use particleboard, ply or MDF, possibly in that order of preference.

Ply is probably the easiest to work with and cut holes in, but is not the cheapest material to buy.
