You might want to try Dragon's Lair, Space Ace, and Brain Dead 13. They are all by the same publisher and they do work on an Arcade Cab/Monitor. Just make sure they are the original DOS versions.
I've also gotten Doom to work. You might be able to get some of the old SIERRA Online games - Leisure Suit Larry, and assorted adventure type games. They only problem might be how many keys you neeed. I'm using ArcadeOs and you can remap keys.
