Wiring the 2 sticks 'simultaneously' should be OK, but I'm a little hesitant to say it's no problem without knowing your method of interfacing to the PC!

If you aren't sure about it, you could always put in some sort of isolator switch(single pole, double throw) that cuts the ground wire connection, so only 1 joystick can operate at a time - simply flick the switch to activate the other stick instead.

A similar thing could possibly be achieved for your trackball/spinner setup, again depending on your interface method. If you go direct to PS/2 you may be able to use a splitter cable.
