Hacking Spinners and Trackballs

I want to convert actual arcade control panels for M.A.M.E. I have several Sidewinder gamepads and intend to use them for Mario Bros. and Elevator Action CPs. But I also want to convert a Star Trek, and Millipede CP.

Can anyone direct me to the most detailed instructions on the web where I can learn how to convert CPs that have spinners and CPs that have trackballs?
