Get a Cheap one. The only difference in stick feel is caused by the housing design, spring tensions, and other non-electronic methods.
Also, no need to get additional pots. Use the pots that come with the stick. They are just fine the way the are. If you need to, just un-soldier the wires to the them, and soldier on longer wires that will reach the peddles.
If for any reason you need an additional pot, either check to see if a local electronic store has one floating arround (make sure to use the same kind), or much easier, buy a 2nd stick. I would, as most cheap sticks are only 10$.
