The arcade could have a suggestion box to request/suggest any games, old or new, and the most voted games can be brought in...likewise, the least used games can be voted OUT of the circuit...if people could vote for one game in the arcade to rotate out of the arcade in favor of bringing in another specific game, etc...
That will get the actual clients' desires nailed down. Going all out, a web site with online voting polls and a list of all current games in the arcade and a list of games that are obtainable to vote for...
Have a few JAMMA cabinets with rotating PCB's, buy cheap from Ebay, etc.
Sell shares in the arcade, everyone here can have stocks and vote in how its' run!
