Sounds like you're right just about where I was a year or so ago :) I started with 4 8-ways, a spinner and trackball too, but really wanted DOT to play properly. I got one of those Happ trigger sticks you're talking about - it's rather expensive, but it's VERY heavy-duty! But in your effort to properly emulate DOT, you didn't mention the push/pull on the spinner - how are you planning to do that? I built my own, as that seems to be the only real option since there aren't any new variants for sale (that I know of) yet. You're only other option is to get an OEM knob off a cabinet, but then you're doing what were trying to avoid, right? Either way, you're right - with all that it DOES occupy lots of space! On another note, if you're still in the planning stage, I recommend you make 2 of those 8-way sticks Happ Opticals, that is if you wanna do Ikari style games. Email me if you want more advice that I may have already run into in building a big machine like that.
