I personally have Raine, Genecyst, KGen98, Nesticle, and ZSNES set up for ArcadeOS. It's up to you to decide what ones you want to use, but here are some descriptions that might help you...

Callus: Capcom System 1 Arcade emulator. Emulates Capcom games like Final Fight and Street Fighter II. Most of them are emulated by MAME.

System16: Sega System 16 Arcade emulator. Emulates various Sega games. Most are emulated by MAME.

Raine: Arcade emulator. Mostly Taito games, half of them are emulated by MAME already. It's best known for running Wrestlefest but I use it because it emulates Elevator Action 2 (a personal favorite of mine).

Rage: SNK/Capcom Arcade emulator. Emulates a few SNK and Capcom games. Most are emulated by MAME.

BRSMS: Sega Master System emulator. Never tried this one (most of the SMS games were released on the NES so you're not missing much).

ColEM: ColecoVision emulator. The best DOS ColecoVision emulator.

KGen98: Sega Genesis emulator. About equal to Genecyst. The sound and to a lesser extent the speed isn't as good as Genecyst, but it does most racing games better than Genecyst.

GENECYST: Sega Genesis emulator. Better than KGen98 in most respects but hardly any racing games work with it.

MGX: Game Gear emulator. I haven't tried it.

Magic Engine: TurboGrafx 16 emulator. The demo version doens't have sound, I don't know if you can even register the DOS version any more.

Nesticle: NES emulator. Best NES emulator, only thing missing is Game Genie codes.

RockNES: NES emulator. Not as good as Nesticle.

SMSPlus: Another Sega Master System emulator.

Z26: Atari 2600 emulator. The best Atari 2600 emulator.

ZSNES: Super Nintendo emulator. The best Super Nintendo emulator by far. The sound is great and it plays almost every game perfectly.
