I emailed Richard Davies from the VidKid website that covers the console controllers Allegro support about the PSX GunCon and MAME.
Here's his reply:

Hi,

Apologies for the extremely long delay before this reply. I had both of my
G-cons working properly in Allegro (setup app) and Mame, using the composite
video out on my old voodoo rush card. I haven't used the guns for about 6
months though, but as far as I know nothing has been changed which would
break them.
The problem with using the guns in Mame was that they are treated as
directional (eg. a centered analog joystick), rather than positional (eg. a
mouse), which meant they were pretty much unusable even with arcade light
gun games.
Allegro and Mame have no real method of flagging analog axes in this way.
Shawn Hargreaves, co-ordinator and original author of Allegro, is of the
opinion that this is upto the application software (and I mostly agree with
him). I passed on these observations to Nicola Salmoria, but I don't know if
any improvements have been made.
Another problem is that I have had no feedback from anyone trying to use
the guns, and no real way of testing the guns out on different hardware, so
I didn't try to come up with a solution myself.
So, in short :-), they should work, but in Mame not very usefully. Robert J
Ragno's JoyMame may have some sort of fix for this, but I haven't tried it
recently, available on www.mameworld.com.
Hmm, I should really setup a message board or mailing list for people using
the psx driver so that I get some feedback...

Hope this helps!

Richardd.

So, maybe Opti-MAME or one of the other unofficial versions will work with the GunCons, or can be modified to work.
Anyway, hope someone with a GunCon and a parallel port interface will be able to learn more.
