The sandwich method worked good for me. I also put a scrap piece of wood on the bottom of my control panel so the exit hole was "clean" also. I bought a new 1 1/8 bit to drill the holes and put my cordless drill on slow. I used C clamps to hold it all together and it worked fine. The only problem occurred when I was drilling fast and the bit nicked the plexiglass.

: OK, I'm going to have a piece of lexan over my control panel. What is the best way to drill the holes for the buttons/etc?

: My current thinking is to sandwich the lexan between my control panel and a piece of scrap wood and drill through all three. That way the holes are perfectly aligned and I don't have to worry about the lexan flying or cutting irregularlly.
