My Capcom Jamma cabinet that I bought from arcadestuff had a sound amplifier that had standard stereo RCA inputs. The output from the amp to the speakers was connected to the mono output terminal but could also be switched to the stereo output mode. Does your cabinet have something similar? In the long run, I didn't end up using this Q-sound amplifier as I had what sounded like a ground loop to me but I couldn't get rid of it even with a ground loop isolator so I ended up just tapping into the speaker wiring and using my SB64. Works just fine.

: My only problem is that I think the Jamma connection is just mono (pins #10 only, not #11) even thought it has stereo speakers and stereo volume. I might try to fix it but for now I just switched MAME to mono.
